Soup’s On!
Thanks this week to Boo Mama for hosting a Soup-tacular day! Soup’s On! We love soup in our house. and one of our favorite recipes at the moment is Potato and Corn Chowder.
Potato and Corn Chowder
1 lg onion, chopped fine (I define “fine” rather loosely, and if my hubby complains about how chunky, then he just does it the next time)
1 rib celery, chopped fine
2 cloves garlic
1/3 - 1/2 lb sausage
3- lg potatoes, peeled and cubed
1 - 1.5 c. chicken broth
1 c. milk
1 can whole kernel corn, drained
salt, pepper, parsley to taste (a dash of hot pepper flakes adds a bit of zip)
Fry sausage, reserving about 1 TB of the fat. Drain well and set aside. Saute onion, celery, garlic in stock pot in reserved fat. Cook until onion is soft, but not brown. Add chicken broth and potatoes to pot. Bring to a boil, cover, and simmer until potatoes are cooked through. Stir in corn, milk, seasonings to taste, and reserved sausage. Increase heat and bring to almost a boil. Serve sprinkled with the parsley. This is best made ahead and allowed to “mellow” a few hours.

I am really glad to see a recipe that doesn’t call for 2 packages of bacon! All the other potato soups do….and I just can’t bear to do that. Thanks!
